Many of us are trying to eat more local seasonal food, but there are times of the year in Canberra when this can be more difficult – the so-called hungry gap.

If you grow food – you’ll also know about the seasonal “glut” when everyone says “No more, please”. Preserving food in a variety of ways allows you to keep food when its flavour is best, and “spread out” the period you can eat it. Like growing your own, preserving food also allows you to control what’s in what you are eating.

Learn how to preserve food safely – through bottling and drying produce at its peak. Learn about planning your food supply to minimise the hungry gaps, and taste different preserves.
