Canberra favourite Fricken sets up for summer at Capital Brewing Co

Canberra brothers Mo and Marwan Saad launched their fried chicken brand Fricken as a pop-up at Forage a few years ago. They quickly realised that their Mum’s recipe was a hit!

Despite the challenges of opening their Braddon store mid-pandemic, over the last two years they’ve become local favourites and are now expanding. One food truck is located at pop-up bar The Jetty, and they’ve just bought a brand new truck for their summer residency at Capital Brewing Co in Fyshwick.

“Who would say no to Capital!? It’s the place to be!” Marwan told Region.

“We’re very happy and proud of what we’ve done. For Capital to ask us means we’ve done something right.”

The fit-out in Fricken’s new food truck has given them the capacity to add grilled chicken options to their menu and provide gluten-free alternatives. They’ve also upgraded their facilities at the Jetty and in Braddon.

Capital Brewing’s Hospitality General Manager Oscar Ferreira says Brodburger’s food truck won’t be going anywhere, but they wanted to add a bit more variety for punters over Summer. As the Dairy Road precinct continues to grow, it just made sense to get an extra food offering on board.

“It just gets busier every year … there’s just more happening at Dairy Road,” he said.

Marwan explains that Mum Jamile Berjak still comes into Fricken to make sure her secret recipe is being followed. Her chicken cutting technique is key to getting the right surface area crunch and perfectly juicy interior.

“She has very high standards! All the staff love her – they call her Aunty,” Marwan said.

See if Mum’s secret recipe lives up to the hype with a classic Fricken box that comes with fried chicken strips and chips, topped with your choice of sauce. Their signature special fricken sauce is brilliant (if you’re feeling fancy, go for parmesan and truffle mayo).

While fried chicken is obviously the headline dish, it’s absolutely worth ordering the cauli nuggs: crisp, tender and totally delicious pieces of fried cauliflower drizzled in sriracha mayo. They’re so good it’s hard to believe they’re vegan!

If you’re getting buffalo wings, you must get the blue cheese sauce on the side, it’s a match made in heaven. There’s also Fricken’s signature range of fried chicken burgers like the ‘teri-fricken-yaki’. And if you don’t fancy chicken, you can still get a Brodburger right inside!

The Fricken food truck will be parked out the front of Capital Brewing all summer long.

Catch them at the Capital campaign launch for GABs Hottest 100 Craft Beers on 11 December. The all-day event will feature live music and comedy, and Gelato Messina will also be swinging by for the day.

The Fricken truck will be at Capital for the summer, and a second truck at The Jetty.

When summer ends, the Fricken truck will drive off into the sunset, or at least somewhere else in Canberra. Marwan says he and Mo have big plans to bring Mum’s chicken to the people, so keep your eyes peeled for what comes next.

“There’s a lot more Fricken coming around!”

Fricken is at the Capital Brewing Taproom, Dairy Road, Fyshwick. The brewpub is open seven days a week from 11:30 am until late. The Fricken food truck will be open from 11:30 am to 9 pm, Thursday to Sunday. You can also find Fricken at 10 Lonsdale Street Braddon or The Jetty, Queen Elizabeth Terrace Parkes.
