How to eat tail-on prawns in creamy sauce

I’ve peeled many prawns in my time, and eaten many creamy prawn dishes.

But it seems to have become fashionable to combine the two, by serving dishes that combine creamy sauces with prawns whose tails are still covered in carapace.

My problem is that I don’t know how to peel the prawn tails without getting the sauce all over my fingers. That’s not a look that will impress Madame Leon when we’re dining at a fine restaurant.

Is there an elegant way to deal with this problem?

I tried that years ago and it was like eating hard plastic (but more expensive). I stupidly tried it a second time, just to confirm.

The way some people are talking about it you would think that we are dropping in our thousands from eating prawns. And can’t the prawn be butterflied (i.e. without the poop trail as it’s removed when the prawn body is butterflied), but still have the tail on. If it’s deepfried it’s all edible (and particularly yummy).

We will be eating insects in the future so you should all just get used to it.

Stick your fork in the middle of the prawn. Cut with your knife almost through (but not entirely through!) the base of the last chitinous segment – ie the segment encasing that delicious bit of prawn flesh, above the tail itself. Gently pull the chitinous segment and tail off the prawn.

This idea of leaving the scales on the end started up a few years ago and it is annoying. I suspect it started up in some so called classy joint and spread from there.
Another thing gets up my goat is ordering bacon n eggs, or scrambled eggs, and the toast turns up with no butter/marm on it. It might be classy but it gets a hell of a reaction from ‘moi’.

If the tail is still on.. isn’t the poop trail still intact?
