Salmon Pies

I was just wondering if anyone knows of a bakery in Canberra that sells salmon pies over Easter?

Bryants Pies in Goulburn do a lovely salmon pie but since I won’t be in Goulburn on Friday I’d hoped someone in here might be able to recommend a bakery in Canberra.

had salmon as part of lunch today – just fried the chunks with a drizzle of sesame oil, tumeric, lemon juice and worcestershire sauce – yum. am going to attempt a version of the recipe above for sunday’s lunch with the other hunks we bought. yum. might go with a dry white, or even a straight cabernet rather than a cider, though that does sound like a combination to try!

bon apetit everyone and happy easter… good, this friday, huh? not at work!

I love Christians. “Yes, we’re doing it tough in memory of our Lord and Savior’s suffering. No meat for us – just fresh Atlantic salmon at $29/kg, cream, butter, white wine, flaky pastry…I can practically feel the nails going in!”

I didn’t have any mozzarella so I put in left over havarti… mmmmm

Well, you don’t have to cheese it up, just put a standard pastry top on it instead.

Sounds really nice, I wish I ate fish. But they smell exactly like the Fyshwick Poo Farm to me.

I want to try one of these Easter Beaster pies they were on about on the radio this morning. I love a good pie, did anyone get one of these? Are they really that good?

Might give that a go, but use smoked spotty carp (trout) instead of salmon.

Probably something to do with those who choose not to eat meat on good friday.

I was going to make boring tuna mornay on Good Friday … but I’m going to try the Salmon pie for a change. Sounds fab!

I think it sounds like a taste sensation! It’s a must try when I finish my diet.

It is rather easy to make. Occasionally I’ll do prawns & scallops or marinara mix instead of the salmon. Just fry them lightly instead of poaching.

My bf’s thoughts when he came home from lunch and I told him my plan and I read him the recipe, hates salmon and most seafood and only ate it if his mum made him on Good Friday’s (heard that one a few times..). Oh his mum loves cider too, gone off Mercury of late perhaps something different may go down a treat with it.

Magners cider is always a good idea.. and I’m always happy try anything that’ll improve the Magners experience 😉

Dead easy too.

1. Grease the pie dish, put in 1 sheet of puff pastry (I’m too lazy to make my own…)
2. Poach salmon fillets (2 fillets or 400g or so) in chicken stoch until it flakes easily. Once poached, remove skin and bones and flake into chunks.
3. Melt 2 tablespoons of butter in a saucepan, add 1/2 a cup of cream, 1/4 cup of chicken stock and 1/4 cup of dry white wine (a good chardy works well). Reduce until thick. Add a small handfull of chopped dill and parsley.
4. Add salmon chunks and 2 beaten eggs and stir through.
5. Put in pie dish and cover with mozzarella cheese.
6. Cook until cheese is golden.
7. Serve with a pint of Magners Cider
