The George Bar and Dining at the Lake George Hotel at Bungendore has taken out the award for the best steak in NSW.

The gala dinner to announce the best of the best in the hospitality industry was held at the Royal Randwick Racecourse.

The awards are a respected institution run by the Australian Hotels Association, which consists of employers in the hospitality and liquor industry, representing over 5000 industry members across Australia.

As finalists in four categories, including Best Restaurant, Best Wine List, Best Draught Beer and Best Steak in the NSW region, the team from The George were thrilled that their steaks took top place in their category.

“We went into the awards last year for best restaurant and missed out by the skin of our teeth. That drove us this year to showcase our local suppliers and local produce with our steaks,” general manager of Gidleigh Hotels, Lazarus Dillon, told Region.

Crediting their cattleman’s cutlet for the win, Lazarus gives a nod to his local supplier.

“The cattleman’s cutlet is from just down the road in Hoskinstown, from Claystone Meats. Having the highest quality meat and sourcing locally is so important to us, and Claystone offers the finest cattleman around.”

Executive chef Bigyan Bohara, who is in charge of dishing up the newly crowned best steaks in the state, also recognises the importance of quality local produce.

“The secret to the best steak is a number of things: it’s a great piece of meat, the marination with the native herbs, a skilled chef and some love and care.”

The AHA award for best steak was hotly contested.

“The judging process is really rigorous. Once we were nominated there were multiple rounds of blind judging. There were 19 finalists in our category, and we were up against some big competition like the Manly Wharf Hotel, so to come out on top is a massive achievement, and the whole team is motivated to keep pushing, so we are in a good place for next year’s awards,” Lazarus explained.

Lazarus attended the gala with Richard and Isabel Harry, the owners of The Lake George Hotel. Securing a whole table for the event, they attended with staff from both pubs they own in Bungendore and even the builder who was instrumental in transforming the Royal Hotel to its current refurbished state.

“We took a large number of team members to the awards night in Sydney. It was a chance to recognise the whole team and celebrate together. There were some bleary eyes the next day.”

Proudly holding the winning trophy, Lazarus noted that it had a few bumps and scratches, evidence that a great night was had by all.
