good brawn is hard to find in Canberra?

i know some of the supermarkets’ deli sections have product they call brawn, but it is not brawn really, just a few scummy offcuts set in industrial strength gelatin. gleurch! and dson’t start me on this ‘presswurst’ thing…

does the hive mind know of anywhere in this fair land where one might purchase honest to goodness real, tasty brawn? Astrodad, a master butcher in times of yore, made the most fabulous brawn and i so miss it. the copper bubbling away with the fine off cuts and herbs and spices, and it setting in rows of tubs in the cool room; then the school lunches and midnight sneaky snacks – ahh memories…

help, anyone?

Love brawn and have the same trouble getting any here at all these days. mum used to make ours from left over meats probably after a big Christmas, not from scratch like the recipes on earlier link. I have this recipe it’s dated 1958 – think of it more as a ‘terrine’ and anyone would enjoy it 😉

Don’t know about brawn, but there is a deli at the belco markets MrsKaos prefers to go to for metwurst and other “rare” or hard to get meats such as this, if they don’t have it they may be able to source some for you.

Maybe you could give the Harmonie German Club a call and ask? Good brawn is much appreciated in Germany, Holland and Belgium. Agree that a lot of the mass produced stuff is awful. My olds make their own – yum!

Brawn is one of those disgraceful dishes that poms who won’t let go of WW2 times eat.

ta trix, can of course make it myself – astrodad has recipe of course. but made in bulk is best way to get the gelatinous goodies working and i don’t have the facilities to make – then eat – that much…

I thought “scummy offcuts set in industrial strength gelatin” was the proper definition of brawn.
