Who is Jeremy Wilcox? I’m the Secretary Manager of the RUC at Turner.
I’ve only been to it once and I was really impressed with the sense of community there now. There is a wine shop (Paranormal Wines) next door and lots of people were buying their food and drink and taking it over to the park to eat and drink, which was great to see.
Most embarrassing pantry item: Keto chocolate bars.
Must-buy ingredient: Fresh ginger.
Next big thing: Good tequila. People are really interested in white spirits now and there’s a big push on vodka and gin.
But I want people to know that good tequila is very different from bad tequila and it can actually be enjoyed on the rocks or just with soda. It doesn’t need a mixer. It’s one of my favourite drinks anyway.
Favourite place for breakfast in the ACT: Hello Cafe. It’s the local cafe at the Campbell shops and I have the Portuguese burger every time.
Let me tell you, it’s particularly good on a Sunday morning …
I haven’t actually tried them yet, but I’ve been to the club a few times and it’s a great spot that not many people know about.
If you’re going there for them, you should order ahead as they are so popular.
Biggest culinary influence: Friends and family. There are so many unrecognised master chefs among them.
I’m not a chef at all, but I do love to cook simple local food – but I have so many amazing people around me who are (which works out well, incidentally).
Favourite cookbook: My Thai cookbook by Tom Kime.
Who I admire on the Canberra food and wine scene: Barney (Barnardo Rebello de Andrade) – formerly of La Grange in Manuka and now of Hello Cafe.
La Grange was one of Canberra’s very first bars/nightspots and it, along with a couple of other bars in the area, were the start of Canberra’s hospitality scene.
What’s on the menu this week: Thai spring rolls.
Where I’m going next: The Duxton at O’Connor. It’s one of Canberra’s best bars.
It’s a great suburban pub with a fantastic atmosphere, and I love going there to kick back and relax.
Before it was The Duxton it was All Bar Nun and it’s now a Canberra institution.
Death row meal: Tom yum goong.
COVID-19 response: A medal for every hospitality joint that has survived the pandemic – and a medal for all those that haven’t.
My really simple recipe tip: For a curry, after you sweat the onions, garlic, ginger and chilli – blend them to make the base of a really authentic curry sauce.
