Where shall we go for a drink? Somewhere casual? Somewhere interesting? Somewhere run by the award-winning crew behind Pilot and Such and Such, which will only be open as a seasonal pop up?
Sounds like That Other Place!
The team who brought us Pilot and Such and Such have a new project on the horizon. Co-owner Dash Rumble said they would like to open other venues in the future, but for now they’re focusing on making the best use of the spaces they already have, including the outdoor dining area at Pilot.
“We realised we weren’t utilising the space to its full potential so we wanted to do something different and creative,” she told Region.
“We want people to experience what we’re doing without committing to a full menu, and it also adds another level of interest and fun for our team.”

The space inside at Pilot has been beautifully curated with a focus on design and walls hung with local art. However, the experience outside is quite different, especially as that corner of Ainslie shops continues to grow as a hospitality hub with a vibrant nightlife.
By transforming their outdoor space into a pop-up cocktail bar, the crew can offer something different to people who want a taste of the Pilot magic while still maintaining the high level of service inside.
That Other Place will offer a limited menu of bar snacks and drinks, particularly creative cocktails using local produce, including zucchinis from Dash’s sister’s garden!
The Canberra Colada will feature rockmelon sourced from local food and farming co-operative Southern Harvest along with Thai milk tea, rum and coconut. The Not Pimm’s Cup uses rosé from local winemaker Vino Friendo, cucumber and strawberries from Southern Harvest and ground cherries (also known as cape gooseberries) from local growers Home Soil.
The food options will be small bites (rather than a full meal) like Appellation oysters with tabasco, radish cakes and XO, or fried olives with feta, chilli and lemon.
They’re also looking at having some kind of pizza or bread option and a burger, which they will mix up as the weeks go along.

That Other Place will be available for a drink and snack before or after a meal at Pilot, or just a spot to drop in and enjoy a few drinks while the weather is still nice.
“The experience will be a little more pared back and less refined than Such and Such or Pilot, but equally delicious,” Dash said.
“We just want people to come in and have a good time!”
That Other Place will be open for three months starting mid-March, from Wednesday to Saturday, drinks from 5 pm and snacks from 6 pm. Walk-ins only. Out the front of Pilot, 1 Wakefield Gardens, Ainslie. Follow That Other Place on Instagram to find out more.
