The mighty croissant — flaky, buttery and golden brown. Crisp on the outside and pillow-soft on the inside. These delicate pastries are the epitome of French culinary art, admired across the globe and impossible to resist.
So, what if we said you could indulge in a free croissant from one of Canberra’s most popular bakeries every day for an entire year?
Three Mills Bakery, known for producing around 250,000 croissants annually, is on the hunt for one lucky Canberran to take on the delicious task of quality control.
Aside from bragging rights, the chosen Chief Croissant Consumption Officer (CCCO) — try saying that three times with your mouth full — will receive a year’s worth of buttery, golden croissants and the chance to host a croissant brunch with friends or family every month.
Three Mills launched this quirky ambassadorship in 2024 to share its love for these moon-shaped marvels with more Canberrans, and now it’s building on the initial success.
“We’re a little obsessed with croissants and sourdough at Three Mills Bakery,” says owner Jarrod Deaton.
“Our mission, since we began, is to share that passion with as many people as possible, and after the overwhelming success of last year’s campaign, which saw a flood of creative entries and plenty of buttery buzz, the bakery is ready to crown its next croissant connoisseur for 2025.”
So, what sweet skills does the CCCO need?
“It goes without saying that they have to be a big-time fan of croissants,” says Jarrod.
“They should be a little bit flaky, slightly doughy, and they should be willing to bring a fun vibe to this otherwise critical role of CCCO.”
Three Mills’ Culinary Director, Bernd Brademann, says the secret to their ultra-crispy, flaky and airy pastries is top-notch ingredients, which include five tonnes of butter every year. They also hand-mix and hand-roll each croissant.
“Croissants are made with really simple ingredients, so it’s important you don’t skimp on these,” says Bernd.
“It’s a series of small steps done well – a little like the game of checkers, easy to learn but hard to master. I would say the most important points are mixing, sheeting the butter in, rolling, proofing and baking.”
While you could try making your own croissants at home, you could also leave it to the experts and drop by the bakery, or better yet, become their Chief Croissant Consumption Officer.
Applications for the CCCO position opened on 18 January and close on 27 January, and will be announced on National Croissant Day – 30 January.
