Oat Milk Soft Serve Food Truck Future Swirl and vegan cafe Sweet Bones Bakery are teaming up for a limited edition trial run of ice cream sandwiches.
Future Swirl owner Maddalena Easterbrook opened her food truck selling oat milk soft serve ice cream in late 2022 and quickly became a cult favourite. While many of her customers are vegan or lactose intolerant, she has also amassed a following of people who just love the taste of her unique product.
Future Swirl regularly parks at the Waves Car Wash in Braddon, just a few metres away from the original location of vegan cafe Sweet Bones Bakery.
“We share a lot of customers. We’re not competing against each other, but we’re really a part of the same community,” Maddalena told Region.
One of her regular customers is Emily Brindley, the co-owner of Sweet Bones.
“My sons and husband and I love going to Future Swirl. We love the product, and we were so excited when they opened.”
Maddalena had been looking at adding new products to her business and realised that some of her customers would go to Sweet Bones Bakery, buy a couple of cookies, and then walk over to Future Swirl and get some soft serve for a DIY ice cream sandwich. So she figured she might as well streamline the experience!
Emily and Maddalena worked together to trial different sizes, flavours and textures to get the right fit.
“We’ve done a sugar cookie and a double chocolate chewy biscuit as well,” Emily explained.
“We tried to make the sugar cookies quite thin, and I’ve done the chewy ones so it’s a softer mouth feel so it doesn’t ooze the soft serve out too much.”
Customers can choose their cookie flavour and the soft serve filling: you can even add sprinkles!
This collaboration between the businesses is just a trial run for now. Maddalena has a limited run of 50 ice cream sandwiches to sell this weekend, but if it goes well, it will be added to the menu.
Maddalena says she’s been blown away by the enthusiasm people have had for her business and is even looking to open a second location interstate later this year.
“While I’d love to see oat milk soft serve become mainstream, for now, we’re really filling a niche. I think Canberra is really special in that regard – people just love to support local businesses.”
Future Swirl is located at the Waves Car Wash, 17 Lonsdale Street, Braddon, from 12:30 pm until late on Saturdays. The ice cream sandwiches will be available until they sell out. Follow Future Swirl on Facebook or Instagram.
