Universally loved, the popular French dessert of Creme Brûlée is a classic. This simple yet sophisticated dish seems to please everyone. Maybe it is the hard crack of the torched, slightly bitter caramel toffee top that gives way to a creamy, vanilla-scented custard, that makes it so beloved. Whatever it is, there is a whole day on the National Day Calendar to celebrate this very sweet treat.

Coming up on Friday the 27th of July is National Creme Brûlée Day and Canberra’s very own dedicated Creme Brûlée business and festival favourite, Get Crackin’ Creme Brûlée, is doing a pop up to celebrate. They will be available in limited quantities and for a limited time from noon – 3 pm (unless sold out prior) at the Rye Cafe Takeaway Window – 9 Lonsdale Street in Braddon.

Craig Ebeling.

Craig Ebeling and Ashleigh Gleeson are the confection mavens behind Get Crackin’ Creme Brûlée. Before starting their first company together, an event production company called Damsel & Sprout, Craig was a chef for just over 10 years.

“Get Crackin’ came about after seeing a hole in the market. We work with all sorts of food vendors on a day to day basis with Damsel & Sprout and noticed that there was a little something missing – Creme Brûlée’s! Everyone loves them; very few are confident enough to cook them at home. So after a few months of sourcing the correct containers and ingredients, Get Crackin’ Creme Brûlée was born,ou” said Craig.

“The base custard is very basic, it’s not something you can really change all that much. It was the sugar mix on top that took the time. When you torch normal castor sugar on top it will only stay hard for about 30 to 40 minutes. The mix we have come up with will last about two hours if kept in the fridge once torched.”

After making their debut at the popular The Forage street food festival in October last year, the desserts quickly became a must-have item and have been a sell out at any event they attend. The sweet fresh vanilla bean custard smell is almost irresistible to walk past and like Craig says: “Is there really anything more satisfying than the good crack of a creme brûlée? We don’t think so.”
