Hot in the City: Three Mills now baking in Fyshwick

With a strong vision to create an artisan bakery that produces incredible sourdough and laminated pastries using house-milled flour, local ingredients and traditional long fermentation techniques, Three Mills Bakery was born.

From small humble beginnings in the winter of 2013 operating out of a basement in the NewActon precinct, the brand has grown in notoriety and size, making a home and name for itself at Majura Business Park.

The beloved Majura Park bakery-café evolved last year, meeting the COVID-19 curveball head-on. The team hit it out of the park with its innovative range of bake-at-home creations and delivery service.

“A few days into the crisis, we knew we had to do something pretty quickly to simply survive. We had to work with what we had differently to keep our team employed. Fortunately, we had been testing a range of bake-at-home pastries since late 2019. We were nowhere near ready, but it was the right time to launch,” director of Three Mills Bakery Jarrod Deaton told Region Media.

“A couple of huge challenges we faced were that we had no previous experience with e-commerce and had trouble finding a consistent supply of produce and packaging.”

After conquering a steep learning curve in digital transformation, their bake-at-home range of croissants and family-sized savoury pies was soon in the ovens and on the social media feeds of happy locals.

The new sleek location offers a selection of pies, toasties, pastry, and coffee.

This year sees the growth of the bakery continue with the opening of an additional cafe in Fyshwick. Located on the busy stretch of Newcastle Street opposite Bunnings, the site has been custom-built, according to the marketing and brand manager of Three Mills Bakery, Belinda Armstrong.

“We wanted to build a state-of-the-art pastry room and needed a little more space. Fyshwick will be our home for pastry, and Majura will remain the home of our sourdough products.”

Open seven days a week, the new location will cater to the wide range of customers passing through the suburb.

“Fyshwick has a really diverse customer base with the area attracting professionals, tradies, home shoppers and families, so it’s busy seven days a week, and our new premises are in a prime location to service all those groups,” Belinda says.

“We will focus on offering coffee, amazing toasties, pies and sausage rolls, as well as a selection of sweet pastries and, of course, at the moment, Hot Cross Buns.”

In addition to the grab-and-go ready-to-eat selection, the store also has a range of their signature bread and popular bake-at-home goods to fill the pantry and the freezer.

Three Mills Bakery is located at 75 Newcastle Street, Fyshwick and is open Monday to Friday from 6:00 am to 1:00 pm, and Saturday to Sunday from 7:00 am to 1:00 pm.
